UA College of Human Environmental Sciences to Host Chef’s Luncheon

TUSCALOOSA, Ala. — The University of Alabama College of Human Environmental Sciences will host a chef’s luncheon on Thursday, Nov. 7, from 11:15 a.m.-12:45 p.m. in J.J. Doster Café in Doster Hall on campus.

Chef Jerome David Butchko Jr., a graduate of the College, will be serving a variety of dishes including Cajun pasta salad, sesame wings with blue cheese dressing, garlic cheese and hickory smoked bacon grits, and low-fat red beans and rice. He also will serve and demonstrate pork loin stuffed with wild rice and roasted peppers at 11:15 a.m., beef Wellington at 11:45 a.m., walnut-raisin bread pudding with Kentucky bourbon honey sauce at 12:15 p.m. and no-bake peanut butter pie at 12:30 p.m.

The dishes will be served cafeteria style so guests may come and go as needed. Copies of the recipes will be available.

Butchko currently works as the district account manager for Winston Industries, a manufacturer of commercial cooking and holding equipment. He’s also had several years of experience in the kitchen. He worked as the executive chef for Kroger’s Gourmet Express program and the Kroger catering center in Louisville, Ky. He also was the executive chef at the Blairwood Health and Wellness Club and a sous and line chef at LaPolma Restaurant, both in Louisville, Ky.

Butchko received a bachelor’s degree in restaurant and hospitality management from UA in 1990 and an associate degree in culinary arts in 1992 from the National Center for Hospitality Studies at Sullivan College in Louisville, Ky.
